Truffle Hunting in Italy: Where & When to Go

Truffle hunting in Italy: Piedmont (Alba white truffle), Tuscany (San Miniato), Umbria (black truffle) and Istria, with seasons, how a hunt works, and how to book.

The short version: Italy’s great truffle regions are Piedmont (Alba, the world’s most famous white truffle, October to December), Tuscany (San Miniato, white truffle peaking in November), and Umbria (Italy’s black-truffle heartland, hunts year round), with Istria just over the border in Croatia a fourth option. A truffle hunt means walking the woods with a trifolau and his trained dog, then sitting down to taste what you find shaved over pasta or eggs. Here is where to go, when, and how it works.

Piedmont: Alba and the white truffle

Alba, in the Langhe, is the home of the famous white truffle (tartufo bianco), the rarest and most expensive of all, in season from October to December and celebrated at the Alba truffle fair. Hunts run with a trifolau and his dog in the hills around the town, often paired with Barolo. Full details in our truffle hunting in Piedmont guide and Alba white truffle season guide.

Tuscany: San Miniato

Tuscany’s truffle capital is San Miniato, in the hills between Florence and Pisa, which also finds remarkable white truffles in November and holds its own fair. It is the easiest region to combine a hunt with wine, since it sits in the heart of Chianti country and makes an easy day out from Florence. See our truffle hunting in Tuscany guide.

Umbria: the black-truffle heartland

Umbria is Italy’s black-truffle country. Norcia is the famous town for prized winter black truffle and charcuterie, while bookable hunts cluster around Gubbio and the surrounding hills, and they run year round. Our truffle hunting in Umbria guide has the details.

Istria, just over the border

Across the border in Croatia, Istria (around Motovun and Buzet) finds both white and black truffles in the Mirna valley forests, with white truffle from September to December. See the best truffle hunting in Istria.

White vs black, and how a hunt works

The white truffle is rarer, more aromatic and far pricier, and it is always shaved raw over warm food. The black truffle is more affordable, more robust and can be gently cooked. For the full comparison, read white truffle vs black truffle. A hunt itself is simple: you walk the woods with a hunter and his dog, the dog scents and digs, and you usually finish with a tasting of truffle over pasta, eggs or bruschetta. Wear sturdy shoes and expect two to three hours.

When to go

White truffle is an autumn thing: roughly October to December (Piedmont and Tuscany peak in November). Black truffle is available much of the year, with prized winter black from December to March and summer black (scorzone) from May to August, so Umbria works in almost any season. Book autumn white-truffle hunts well ahead, as they fill up around the fairs.
